Gin Mint Cocktail
This recipe was created on a hot summer day by my ever-loving husband, who saw my abundance of mint growing on our porch and decided to surprise me with a drink. It’s very much like a mojito but sans the white rum. The mint and lime flavors compliment the flavor of the gin, bringing you a refreshing summer drink! I couldn’t think of any better way for the inaugural use of my Container Cocktail Garden.
Ingredients:
- 1 ounce fresh lime juice
- 2 teaspoons sugar
- 1 cup crushed ice
- 11 fresh mint leaves, torn in large pieces (leave one whole for garnish)
- 2 ounces gin
- 2 ounces Sprite (I like to use the kind from Mexico)
Directions:
In a highball glass, dissolve the sugar in the lime juice. Add the crushed ice, mint leaves, gin and Sprite. Gently stir and garnish with the remaining whole mint leaf.

My husband absolutely loves mojitos but I find them a bit too strong for my tastes. I’ll have to make him one and steal a few sips!
